Stolen from Smitten Kitchen's Ultimate Chicken Soup recipe, modified to be bone broth, and also for onion diversity.
1 medium-large yellow onions, unpeeled, halved1 large leek, cleaned and cut lengthwise1 shallot, unpeeled, halved"2" garlic cloves, peeled and smashed a little1 large carrot1 large parnsip 1 celery rib4 pounds of fresh chicken wings1 tablespoon kosher salt1/2 teaspoon dried thyme or 2 teaspoons chopped fresh1/8 teaspoon red pepper flakes1 tablespoon tomato paste2 bay leavesAs much water as you can fit in your crock pot basically
Combine all ingredients in a large (6 quart or larger) slow-cooker. Cook on LOW for 24 hours. Strain. Do NOT attempt to use the chicken for anything; it's super gross. Trust Past Sonja.

Cook at 400 degrees for between 10-20 minutes depending on whatchu got on 'em.
This is a good recipe. I added shallots, cherry tomatoes, tomato paste.

For the chicken
1 1/2 pounds boneless, skinless chicken thighs
2 tablespoons lime juice (half a juicy lime)
1 1/2 teaspoons kosher salt
1 1/2 teaspoons dried oregano
2 teaspoons ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1 garlic clove, minced or pressed
Few dashes hot sauce, optional To assemble
8 (6-inch) flour or corn tortillas
2 large bell peppers, cut into thin strips (I use a mix of green, red and other colors, if I can find them)
1 large yellow or sweet onion, halved and sliced thin
Coarse salt Fixings (pick your favorites)
1 1/2 cup cooked black beans (1 15-ounce can, drained and rinsed)
Salsa or pico de gallo
Sliced avocado or guacamole
Shredded cheese or sour cream
