I invented this until proven otherwise.
- Preheat oven to 400 degrees
- Cut squash in half. Place facedown on a cookie sheet lined with aluminum foil.
- Bake for 30 minutes.
- Take squash out of the oven and turn face-up.
- Change oven temperature to 325 degrees.
- Enlarge squash cavity with spoon if necessary.
- Place sun-dried tomatoes, shallots, and feta cheese in the cavity.
- Bake for 15 minutes. Remove the squash again.
- Crack an egg in the cavity.
- Return squash to oven for another 10-12 minutes, or until cooked.
