Acorn Squash w/ Baked Egg: AKA ?

I invented this until proven otherwise.



  1. Preheat oven to 400 degrees
  2. Cut squash in half. Place facedown on a cookie sheet lined with aluminum foil.
  3. Bake for 30 minutes.
  4. Take squash out of the oven and turn face-up. 
  5. Change oven temperature to 325 degrees.
  6. Enlarge squash cavity with spoon if necessary.
  7. Place sun-dried tomatoes, shallots, and feta cheese in the cavity. 
  8. Bake for 15 minutes. Remove the squash again.
  9.  Crack an egg in the cavity.
  10. Return squash to oven for another 10-12 minutes, or until cooked.
